Potato Frittata (Kuku) or Skillet Latkes

Iranians serve frittata (Kuku) as a vegetarian side dish or as a sandwich. Kuku Sabzi (herbed frittata) and Potato Frittata (Kuku Seeb Zamini) are also served after memorial services.

Potato frittatas can also be eaten as Latkes during Hanukkah.
